Hi,
This is my first post to this topic, a great idea! I have a hobbiest interest in recording and have done a few CDs for other folks. I have become pretty comfortable with the two step process of:

1. Capturing audio tracks by various means (MP3 recorder, "intermediate" Fostex MR-8HD, and a larger format VS-1824 DAW.

2. Import tracks to PC and finish audio tracks with software. (Traction is my current favorite)

I have a review of the recording process using the Fostex MR-8HD here:

thats a nice little live rig Randy!
I'm new to DAW and got Tracktion 2 a few months ago and am just loving it. I use the line6 Toneport UX2 for an interface. I really like it as well, it has some nice vocal pre's and of course the amp models. But that chains you to a computer...I like the mobility of your rig.
